Candy Bar Pie

I’ve had this recipe for going on two decades and I’ve made this pie twice. Both times it was a huge hit. I haveIMG_7711 no idea why I don’t make it more often. I think I will from now on. Life is short, enjoy pie! We sure do here at our house. I would imagine you could use whatever candy bar you prefer, but caramel probably should be one of the ingredients in the bar.

Candy Bar Pie

5 Snickers candy Bars (2.07 oz. each), cut into 1/4” pieces      IMG_7688

1 baked 9” pastry shell

12 oz. cream cheese, softened

1/2 cup sugar

2 eggs

1/3 cup sour cream

1/3 cup peanut butter

2/3 cup semisweet chocolate chips

2 tablespoons heavy whipping cream

Place candy bar piece in the baked pastry shell, set aside. in a mixing bowl, beat cream cheese and sugar until smooth. Add eggs, sour cream, and peanut butter; beat on low speed just until combined. Pour into pastry shell. Bake at 325* for 35-40 minutes or until set. Cool on a wire rack.

In a small heavy saucepan, melt chocolate chips with cream over low heat until smooth. Spread over filling. Refrigerate for 2 hrs. or overnight. Cut with a warm knife.

I didn’t use a warm knife to cut the pieces and the chocolate topping cracked and broke apart on each piece and it didn’t cut pretty 😦 but it tasted divine!
